Enormous "Feed an Army" Pot of Cream of Veggie Soup

Due to some mold issues in our rental home, causing a move, I'm having to toss a number of personal items. One of them is a handwritten recipe book I've had for a number of years. I've decided to take the opportunity to post the recipes for my own use and to share. :)

Excellent for large quantities of garden veggies!

20c cream
10c veggie puree
2 1/2 sticks butter
1 1/8 C flour

Fry onions in butter, don't brown. Add celery (optional). Add water (not much!), cook veggies. Put through blender or food processor. Add flour to veggies in food processor or blender. Put in pan, gradually add cream, salt, pepper, cayenne, etc to taste. Warm very slowly.

1/4 batch:
5 c cream
3 1/3 c veg puree
5 T butter
4 1/2 T flour
